Like every year, we will go to the vineyard to make "aguardiente de orujo". "Aguardiente de orujo" (perhaps "Orujo firewater" or something like that) is an spirit made from destilation of grape residues (these residues is what we called "orujo" here in Spain). When you press the grapes to get out its juice you could use the residues (the skin of the grapes, the wood, etc.) to make "aguardiente". You put these residues inside plastic barrels with a bit wine during 3 months (we do the vintage in september) and then you could fill the distiller with "orujo".
The result of the destilation is a 45-50% volume transparent liquid excellent for the coldest enviroments, he he he...
With some herbs you could change the colour of the liquid and a bit its taste.
At the beginning of the destilation the liquid resultant have 60 or 70 % volume, but bit a bit its percent falls to 40 or 50.
The destilation process remembers me ancient alchemy (it's so good that must be from Devil's influence, he he he).

With this "orujo firewater" in northwestern Spain is made "A queimada". "A queimada" is a typical tradition. We fill a huge ceramic pot with firewater, then add sugar and orange and lemon rinds and then put fire on it and begin to mix it with a ceramic spoon. The flames are blue and very hipnotist. Meanwhile, the person in charge to make "A queimada" have to recite a spell known as "O conxuro". This spell is about ancient monsters of nortwestern Spain mithology (devils, witches, etc.). Very interesting.
I found a web (in english!) about queimada: http://www.galinor.es/galeria/queimada-e.html There you could find a traslation of the "conxuro" (the original isn't spanish, it is in "gallego", another language from the northwestern Spain, Galicia).
